Three Cheese Pepperoncini Spread Recipe @pinch

This is a super easy appetizer to prepare the next time you are hosting company. Pepperoncinis are a milder pepper and add a slight bite to the dip, but do not make it spicy. Feta and gorgonzola cheese complement each other wonderfully and add to the punch of flavor. This dip is very rich, thick, and creamy. Fantastic on a slice of toasted bread. This is my take on a Greek feta spread known as Kopanisti. I love the combination of cheeses and the zing from the peppers and garlic. Add the crushed red pepper if you like it extra spicy! Enjoy!

Ingredients :
  • 8 ounce(s) Greek cream cheese (cream cheese and Greek yogurt, if available), or regular cream cheese, softened
  • 4 ounce(s) crumbled feta cheese
  • 2 ounce(s) crumbled gorgonzola or other blue cheese
  • 1/2 cup(s) pepperoncini peppers, seeded, stemmed and coarsely chopped, plus more to taste
  • 1 tablespoon(s) juice from peppers
  • 1 clove(s) garlic
  • 1 teaspoon(s) freshly ground black pepper
  • 2-3 tablespoon(s) extra virgin olive oil
  • 1 teaspoon(s) crushed red pepper flakes (optional)
  • pita crisps, crackers, or any sturdy bread or toast, for serving
Intructions :
  • Place all ingredients in a food processor
  • Pulse to combine. It's better to have this a little chunky instead of a smooth puree
  • This can be eaten immediately but it will be better if allowed to sit for a while or refrigerated overnight. Serve with pita crisps, crackers, or toast.
