Packed with fresh cranberries and dried fruit, this abundant cranberry bread lives up to its name. It has a similar texture to fruit cake but is full of cranberry orange flavor. Serve warm with a slather of butter during the holiday season for a delicious treat. Or, package a loaf and share it with a friend. This cranberry bread would make a lovely homemade gift. I found a recipe years ago that looked like just the right one for cranberry bread, but it needed a few adjustments. After years of making this bread, I think I have it just right. Everybody always asks for another slice!

Ingredients :
- 2 cup(s) all-purpose flour
- 1 cup(s) granulated sugar
- 1 1/2 teaspoon(s) baking powder
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) baking soda
- 1/4 cup(s) butter
- unsalted
- 1 large egg
- beaten
- 3/4 cup(s) orange juice
- 1 teaspoon(s) orange peel
- optional
- 1 1/2 cup(s) fresh cranberries
- chopped
- 1 1/2 cup(s) raisins
- dried cranberries
- dried cherries
- or golden raisins
Intructions :
- Preheat oven to 350 degrees. Grease (2) 9 x 5 x 3 loaf pans.
- Sift flour
- sugar
- baking powder
- salt
- and baking soda in a large bowl.
- Cut in butter until crumbly.
- Add beaten egg
- orange peel
- and juice. Stir until the mixture is evenly moist.
- Fold in fresh cranberries and your choice of raisins
- dried cranberries
- dried cherries
- or golden raisins.
- Spoon into 9 x 5 x 3 loaf pans. It's best to divide between 2 pans because the bread rises and will spill over the edges.
- Place in the preheated 350 degree oven.
- Bake for 45 minutes or until the bread begins to pull away from the sides of the pan and a cake tester inserted in the middle of the loaf comes out clean.
- Cool.
