If you think you don't like a fried egg, this breakfast sandwich will be for you. The spinach, tomato, and avocado elevate this breakfast. It's a healthy and filling sandwich. Quick, easy, and super tasty. From a favorite nearby cafe. I go to get this breakfast sandwich and this has got to be the most filling and delicious one ever! My homemade version doesn't include bacon or other meat, but fresh veggies, quick-cooked frozen spinach (if I don't have the fresh spinach), and a good cheese melted on top! This version dated 9/10/11 included spinach, grated fresh lemon, avocado, mozzarella, and an egg on multi-grain toast. A Pepperidge Farm sandwich thin could be used.
Ingredients :
- 2 slice(s) good quality multi-grain bread
- toasted
- 1-2 - fresh fried egg(s)
- 1 cup(s) partial package of baby spinach or frozen spinach cooked
- 1 - ripe avocado
- sliced
- 2 slice(s) provolone or mozzarella cheese
- 1 pinch(es) sea salt and ground black pepper on each half sandwich
- 1 pinch(es) grated lemon rind in spinach when cooking it and some to sprinkle on top when no tomato is used
- 1 - ripened tomato (from a local garden)
- optional
Intructions :
- Toast the bread.
- Microwave the spinach.
- Slice tomato and avocado.
- Fry one or two fresh eggs to desired taste.
- Place on top of toast and top with mozzarella.
- If you place the cheese on top
- then microwave for one minute or less
- checking to see when the cheese is melted. Broil if preferred until golden and the cheese is melted enough.
- Top with tomato slices
- spinach
- grated lemon
- and avocado.
