Wow, these are delicious oatmeal cookies. A cross between an oatmeal cookie and a chocolate chip cookie, you get the best of both worlds in every bite. They're a copycat found at Potbelly sandwich shops (hence, the almost Potbelly name). Chewy and tender, have a cold glass of milk handy for dipping. If any of you have had a Potbelly cookie, you know why I am trying to recreate this recipe. They are delicious! This recipe is close and very, very good.

Ingredients :
- 1 cup(s) margarine
- 1 cup(s) brown sugar
- 1 cup(s) white sugar
- 2 large eggs
- 2 teaspoon(s) vanilla
- 2 cup(s) all-purpose flour
- 2 1/2 cup(s) oatmeal
- 1 1/2 teaspoon(s) baking soda
- 1 teaspoon(s) salt
- 2 cup(s) chocolate chips
Intructions :
- Preheat oven to 350 degrees.
- In a large mixing bowl
- cream margarine and sugars.
- Add in egg
- one at a time
- beating after every addition.
- Mix in vanilla.
- In a separate bowl
- combine oats
- flour
- baking soda
- and salt. Mix together.
- Then slowly add into the margarine mixture. Add about a cup at a time
- mix
- then add another cup. Do this until it is all blended together. Mix in chocolate chips.
- Form dough into medium size balls. Place on cookie sheet covered with a Silpat or parchment paper.
- Bake for about 10 minutes.
