Apple Pie Muffins Recipe @pinch

What could be better than waking up on a fall morning to the smell of apple pie muffins? Super moist, the muffins are buttery with chunks of apple inside. On top is a delicious cinnamon-spiced crumble. They kind of taste like apple strudel. Yum! I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

Ingredients :
  • CRUMB TOPPING
  • 1/2 cup(s) brown sugar
  • firmly packed
  • 1/3 cup(s) all-purpose flour
  • 1/4 cup(s) unsalted butter
  • softened
  • 1 teaspoon(s) cinnamon
  • MUFFINS
  • 1 1/2 cup(s) brown sugar
  • firmly packed
  • 2/3 cup(s) canola oil (can use vegetable oil)
  • 1 large egg
  • 1 1/2 teaspoon(s) vanilla extract
  • 1 teaspoon(s) cinnamon
  • 2 1/2 cup(s) all-purpose flour
  • 1 teaspoon(s) baking soda
  • 1/4 teaspoon(s) salt
  • 1 cup(s) buttermilk
  • 3 cup(s) peeled and diced firm tart apples (I use granny smith)
Intructions :
  • Topping: In a small bowl
  • toss together sugar
  • flour
  • butter
  • and cinnamon until crumbly, set aside.
  • Muffins: In a large bowl
  • whisk together brown sugar
  • oil
  • egg
  • cinnamon
  • and vanilla until smooth.
  • In a separate bowl
  • sift together flour
  • soda
  • and salt.
  • Stir flour into the oil mixture alternately with buttermilk.
  • Add until completely incorporated.
  • Fold in apples
  • mixing just until combined.
  • Spoon into greased muffin cups filling 3/4 full.
  • Sprinkle topping over evenly.
  • Bake at 350 F for 25-30 mins or until golden brown and tops spring back.
