What could be better than waking up on a fall morning to the smell of apple pie muffins? Super moist, the muffins are buttery with chunks of apple inside. On top is a delicious cinnamon-spiced crumble. They kind of taste like apple strudel. Yum! I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

Ingredients :
- CRUMB TOPPING
- 1/2 cup(s) brown sugar
- firmly packed
- 1/3 cup(s) all-purpose flour
- 1/4 cup(s) unsalted butter
- softened
- 1 teaspoon(s) cinnamon
- MUFFINS
- 1 1/2 cup(s) brown sugar
- firmly packed
- 2/3 cup(s) canola oil (can use vegetable oil)
- 1 large egg
- 1 1/2 teaspoon(s) vanilla extract
- 1 teaspoon(s) cinnamon
- 2 1/2 cup(s) all-purpose flour
- 1 teaspoon(s) baking soda
- 1/4 teaspoon(s) salt
- 1 cup(s) buttermilk
- 3 cup(s) peeled and diced firm tart apples (I use granny smith)
Intructions :
- Topping: In a small bowl
- toss together sugar
- flour
- butter
- and cinnamon until crumbly, set aside.
- Muffins: In a large bowl
- whisk together brown sugar
- oil
- egg
- cinnamon
- and vanilla until smooth.
- In a separate bowl
- sift together flour
- soda
- and salt.
- Stir flour into the oil mixture alternately with buttermilk.
- Add until completely incorporated.
- Fold in apples
- mixing just until combined.
- Spoon into greased muffin cups filling 3/4 full.
- Sprinkle topping over evenly.
- Bake at 350 F for 25-30 mins or until golden brown and tops spring back.
