This chicken salad is like nothing you've tried before. It's untraditional and amazing. The chicken salad is perfectly balanced with crispy cabbage, savory chopped chicken, and crunchy slivered almonds. Mixed with the tangy and slightly spicy carrot ginger dressing takes this chicken salad to a whole new level. The dressing alone is fantastic. Great for a picnic... if you decide you want to share. I love chicken salad sandwiches and I love this carrot ginger dressing so I have combined the two for a unique wonderful sandwich. Enjoy!

Ingredients :
  • CHICKEN SALAD
  • 2 - chicken breasts
  • cooked and chopped
  • 3 slice(s) bacon
  • cooked and chopped
  • 1 bag(s) tri-colored cabbage mix
  • 16 oz.
  • 1 bunch(es) scallions (green onions)
  • 1 package(s) slivered almonds
  • 4 oz.
  • 2 tablespoon(s) sesame seeds
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • CARROT GINGER DRESSING
  • 3 - carrots
  • peeled and cut up
  • 1/2 - small onion
  • peeled and cut up
  • 3 clove(s) garlic
  • peeled
  • 1 stalk(s) celery
  • cut up
  • 1 1/2 inch - ginger peeled
  • 1 tablespoon(s) sugar
  • 4 tablespoon(s) white vinegar
  • 2 tablespoon(s) soy sauce
  • 2 tablespoon(s) vegetable oil
  • BREAD
  • 8 slice(s) crusty bread
  • CONDIMENTS
  • 4 - lettuce leaves
Intructions :
  • Dressing: Cut the veggies into small pieces and put in the food processor with liquids.
  • Process until smooth. Set aside.
  • Chicken salad: Mix together the ingredients.
  • Blend in the dressing. Refrigerate.
  • Spoon chicken salad onto crusty bread. Top with Lettuce. Slice and serve.
