Black Eyed Peas Dip Recipe @pinch

Black-eye pea dip like this has been around for a while. But, we love the twist on this recipe. Using balsamic vinegar makes this feel a little fancy. Chopped green, red, and yellow bell pepper, along with cilantro, gives the dip a very fresh flavor. A delicious dip for a cookout, game night or even at a tailgate. The longer it sits, the better it gets. This black-eyed peas dip is a family favorite. Great for game nights, as well as for entertaining guests!

Ingredients :
  • 3/4 cup(s) balsamic vinegar
  • 1/2 cup(s) olive oil
  • extra virgin
  • 1/4 cup(s) sugar
  • 2 teaspoon(s) salt
  • 1 teaspoon(s) black pepper
  • 4 can(s) black-eyed peas
  • rinsed and drained
  • 15 oz each
  • 1 cup(s) chopped green bell pepper
  • 1 cup(s) chopped red bell pepper
  • 1 cup(s) chopped yellow bell pepper
  • 1 cup(s) chopped red onion
  • 1 1/2 cup(s) cherry tomatoes
  • quartered
  • 1 cup(s) chopped fresh cilantro or parsley
Intructions :
  • Combine all dressing ingredients in a bowl and mix thoroughly to dissolve sugar. Set aside.
  • Rinse and drain peas well. Place in a large glass or aluminum bowl.
  • Add remaining ingredients
  • peppers
  • onions
  • tomatoes
  • cilantro
  • and dressing. Toss well. Transfer to a plastic container with a lid and refrigerate for at least 2 hrs before serving.
  • Service with crackers or tortilla scoops. Enjoy! ]
