Turn Buffalo wings into a cheesy chicken casserole. This dish is cheesy and has the perfect amount of Buffalo flavor. Purchasing store-bought grilled chicken makes prep a breeze. Filled with cubed chicken, brown rice, onion, and cheese, this is a quick, easy, and hearty meal for game day. This quick dish is always a hit when I have a luncheon at work or church. It's so easy to customize: add veggies, spicy it up with some jalapeno, or cool it down with a dab of sour cream or ranch dressing.

Ingredients :
- 3 cup(s) grilled chicken cubed
- cooked
- 2 cup(s) shredded Colby Jack cheese
- 1 large onion
- 1 cup(s) Frank's Red Hot Wings Buffalo Sauce
- 2 cup(s) cooked brown rice
- dash(es) garlic pepper
Intructions :
- Preheat oven to 300. Cook 2 cups of brown rice and place in a bowl.
- For the grilled chicken
- I like to use John Soules Foods Rotisserie Seasoned Chicken Breast Strips because they are gluten-free and fully cooked. I chop them into 1/2-inch cubes
- add a few dashes of garlic pepper (season to your taste)
- and warm in a skillet over medium heat for about 5 minutes. Place chicken in the bowl with cooked rice.
- Chop onion and saute in a 1/2 tsp of olive oil add a few dashes of garlic pepper (season to your taste). When done
- add to bowl with the grilled chicken and rice.
- Add 1 cup of cheese and 1 cup of wing sauce. Mix well.
- Lightly spray a casserole dish with Pam. Add chicken and rice mixture. Sprinkle the remaining cup of cheese on top. Bake in the oven until cheese is golden or 30 minutes.
- You can use white rice. Sometimes I break up corn tortillas and place them at the bottom of the dish and layer the chicken mixture. Sometimes I add sliced mushrooms. You can add whatever you like and make it as mild or hot as you want.
