Cheesy Mashed Potato Bake Recipe @pinch

What to do with leftover mashed potatoes from your holiday meal? Try this potato bake. This has all the great flavor have and memories have of traditional potato pancakes but much easier to prepare. The extra mashed potato are doctored with shredded cheese and bread crumbs. Once they are baked, the potatoes are super cheesy and have a buttery flavor. In this recipe, the leftovers may be better than the original mashed potatoes. I did this instead of making individual potato cakes and frying them. Trying to get away from frying. You can add any combination of cheeses you like.
