Chewy Caramel Brownie Pie Recipe @pinch

Sweet and satisfying, this chewy caramel brownie pie is fantastic. It has a rich and dense brownie pie layer that's covered in gooey caramel. Sprinkling with chocolate chips and nuts and then baking melts the chips and slightly toasts the pecans. It's an easy chocolate caramel dessert that can be served at a holiday meal or whenever you're craving chocolate. This is an easy pie/cake to make. I first acquired this recipe several years ago from a friend in Maryland. I have made it once for my family, and it was gone in no time flat. It's time to make it again. So good, so gooey, and so sinfully delish!

Ingredients :
  • 1/2 cup(s) butter
  • 4 - unsweetened chocolate squares
  • 1 cup(s) granulated sugar
  • 3/4 cup(s) self-rising flour
  • 2 large eggs
  • slightly beaten
  • 1 teaspoon(s) vanilla extract
  • 8 ounce(s) caramels
  • unwrapped
  • 3 tablespoon(s) whipping cream
  • 1/2 cup(s) chopped pecans
  • 1/4 cup(s) semi-sweet chocolate chips
  • - vanilla ice cream
Intructions :
  • Heat oven to 350 F. In a 2 quart saucepan
  • combine butter and unsweetened chocolate.
  • Cook over medium heat
  • stirring occasionally
  • until melted.
  • Whisk together remaining brownie ingredients.
  • Add melted chocolate and butter.
  • Spread batter into a greased 9 pie pan.
  • Bake for 20 to 25 minutes or until the brownie is firm to the touch.
  • Meanwhile
  • in a 1-quart saucepan
  • cook caramels and whipping cream over medium-low heat.
  • Stir occasionally until the caramels are melted.
  • Remove the brownie from the oven.
  • Spread the melted caramel mixture over the entire baked brownie.
  • Sprinkle with pecans and chocolate chips.
  • Return to oven. Bake for 3 to 5 minutes or until the caramel mixture is bubbly.
  • Let stand for 30 to 45 minutes.
  • Cut into wedges. Serve warm with ice cream.
