Chewy Granola Bars Recipe @pinch

Throw a couple of these homemade granola bars in a resealable bag and you have a great on-the-go snack. They're chewy, sweet, and full of texture. Puffed rice gives them a little crunch and the oats are chewy. The peanut butter flavor is faint, but there. We loved the tart contrast from the dried cranberries. So good! These are really yummy. My 16 month old loves them too...minus the cranberries and raisins.

Ingredients :
  • - cooking spray
  • 2 cup(s) old-fashioned oats
  • 2 cup(s) puffed rice cereal
  • 1/2 cup(s) sunflower seeds and/or slivered almonds
  • 1/4 cup(s) wheat germ
  • 1/2 cup(s) coconut
  • shredded
  • 1/4 cup(s) dark or semi-sweet chocolate chips
  • 1/4-1/2 cup(s) raisin and/or craisins
  • 1 cup(s) brown sugar
  • 1 cup(s) corn syrup
  • light
  • 1 cup(s) peanut butter
  • creamy
  • 1 teaspoon(s) pure vanilla extract
Intructions :
  • Line a 13x9-inch pan with parchment or wax paper. Spray with cooking spray.
  • In a large bowl combine oats
  • puffed rice
  • sunflower seeds
  • wheat germ
  • chocolate chips
  • coconut
  • and raisins. Set aside.
  • In a microwave-safe bowl
  • combine brown sugar
  • corn syrup
  • and peanut butter. Heat on high for 2 minutes until the mixture boils
  • stirring halfway through.
  • Stir in vanilla extract.
  • Pour the peanut butter mixture over the oat mixture, stir until it is moist.
  • Press firmly into the pan.
  • Let sit for one hour before cutting into bars.
  • **These are really chewy
  • but if you like a crunchy granola bar you can put them in the fridge and they will harden right up** ENJOY!! ]
