Chocolate Peanut Butter Chex Mix Recipe @pinch

This recipe takes Chex mix to a whole new level. It is filled with cereal, Reese's mini cups, marshmallows, peanut butter chips, and chocolate chips. The recipe makes quite a bit. Perfect for a party or to leave on the counter during the holidays and let everyone grab a handful as they pass by. Package in a cellophane bag for a delicious homemade Christmas gift. This stuff is so darn good! It is addictive so I don't make it too often. It can be made with lots of substitutes... I have substituted different cereals for the Chex such as Cocoa Puffs, Golden Grahams, and Cinnamon Toast Crunch. I have also substituted different chips for chocolate chips such as butterscotch, white, milk, dark, etc. It is easy and delish!

Ingredients :
  • 8 cup(s) Chex cereal
  • 6 tablespoon(s) butter
  • 3/4 cup(s) brown sugar
  • 3 tablespoon(s) corn syrup
  • 1/4 teaspoon(s) baking soda
  • 1 package(s) Reese's mini cups (8 oz)
  • 1 cup(s) dry roasted peanuts
  • 1 cup(s) marshmallows, mini
  • 1 cup(s) chocolate chips (milk or semi sweet)
  • 1 cup(s) peanut butter chips
  • 2-4 tablespoon(s) heavy cream
Intructions :
  • Line a large cookie sheet with waxed paper and set aside. Melt butter, brown sugar, and corn syrup over low heat in a large pot. Stir until combined and add the baking soda. It will foam up a little
  • Add cereal and stir until evenly coated
  • Pour the mixture onto the cookie sheet and spread it out evenly
  • Pour bag of mini Reese's over warm cereal mix. Add nuts and marshmallows
  • In that same pan (less dishes=good thing) which is now empty, add 1 cup peanut butter chips and 2 tablespoons of heavy cream. Stir until melted
  • When melted, drizzle over the mix
  • Repeat the same steps using the chocolate chips
  • Drizzle chocolate. Allow mixture to cool and break into pieces. Try not to eat the whole batch in one sitting!
  • *You can substitute cereals in this also. One time I used 4 cups rice Chex and 4 cups Cocoa Puffs. You can also substitute different flavors of chips... white chocolate, butterscotch, etc. Use additional ingredients also such as pretzels, M & M's, or whatever is on hand.
