Chocolate Raspberry Tart Recipe @pinch

Sweet and tart, this is a special chocolate dessert. The tart is rich, smooth, and creamy with hints of raspberry flavor in every bite. We enjoyed this mix of dark and semi havesweet chocolate with the raspberry puree. The crust adds a hint of cinnamon to the tart that adds a whole different level of flavor. It reminds us of a raspberry dark chocolate truffle. Yum! It is a great sweet and tangy dessert that can be made in a number of different ways. I love it because I'm such a chocolate fan.

Ingredients :
  • CRUST
  • 1 cup(s) graham crackers, crushed
  • 1 cup(s) fudge stripe cookies
  • 1 tablespoon(s) cinnamon sugar
  • 6 tablespoon(s) butter, melted
  • FILLING
  • 6 ounce(s) dark chocolate chips
  • 8 ounce(s) semi-sweet chocolate chips
  • 3/4 cup(s) heavy cream, cold
  • 10 ounce(s) red raspberries, frozen in syrup
  • 1 cup(s) sugar
  • 4 tablespoon(s) lime juice
  • RASPBERRIES
  • 2 pint(s) raspberries
  • 2 tablespoon(s) lime zest
  • 1 teaspoon(s) sugar
Intructions :
  • Crust: Crush crackers and cookies by hand or blender. Add to bowl and combine cinnamon and butter. Place in a 10-inch tart and set in the freezer to chill. About 10-15 mins
  • Filling: In a saucepan, combine frozen raspberries, sugar, and lime juice. Cook on med heat for 10 mins
  • Strain through a fine sieve
  • Heat heavy cream on the stove until warm. Add chocolate to a bowl. Pour heavy cream over the chocolate and set for 1 min
  • Pour in the puree and whisk until combined
  • Pour filling into the chilled tart. Set in freezer for 30-40 mins. Then move to the fridge for 2-4 hours or until set
  • Raspberries: Place raspberries in a bowl. Add lime zest and sprinkle with sugar. Arrange on top of the tart.
