Easy to follow, this is a simple Colcannon recipe. This colcannon is made with creamy mashed potatoes with chunks of cabbage and bacon then it's topped with melted butter. Who knew little bits of bacon to this classic dish would have such an impact. Cooking the cabbage and onions in the bacon grease adds tons of flavor. This is a fantastic side dish for any time of the year but would be delicious on St. Patrick's Day with corned beef and cabbage or on Halloween. This is an Irish dish I made last night. My Hubby loved it!

Ingredients :
  • 2 pound(s) potatoes
  • peeled & cubed
  • 4 slice(s) bacon
  • 1/2 small cabbage head
  • chopped
  • 1 - onion
  • chopped
  • 1/2 cup(s) milk
  • 1/4 cup(s) butter
  • melted
  • - salt and pepper
  • to taste
Intructions :
  • Put potatoes in a saucepan with enough water to cover. Bring to boil
  • cook until tender (15 or 20 minutes).
  • Cook bacon in a skillet until crisp and save drippings. Crumble bacon and set aside.
  • In bacon drippings or olive oil
  • saute onion and cabbage until soft and translucent (about 10 minutes).
  • Drain potatoes. Mash with milk. Season with salt/pepper.
  • Stir in bacon
  • cabbage
  • and onions.
  • Transfer to a serving bowl. Melt butter. Make a well in the center and pour in butter. Serves 8 Enjoy! ]
