On a super hot day, this cucumber soup is a refreshing lunch or side for dinner. This recipe is filled with cucumber and dill flavor. The ice melts slowly in the super creamy soup keeping it cold. This is a wonderfully cool and refreshing soup on a hot summer's day. I love cucumbers and sour cream, so I made up this wonderful cool iced cucumber soup. With a touch of garlic and dill, it begins to sound like a Greek recipe to me. Maybe a little like tzatziki sauce! If that's the case... Then the Gods on Mt. Olympus would surely be proud! Ingredients :
- 1-1/2 - cucumber, peeled and shredded
- 1 tablespoon(s) olive oil
- 1 teaspoon(s) salt
- 1/4 teaspoon(s) white pepper
- 1 clove(s) garlic, minced
- 2 tablespoon(s) fresh dill
- 1-1/2 cup(s) yogurt or sour cream
- - *** a couple radishes, sliced cucumbers, sprig of parsley, crackers, and a toga are optional
Intructions :
- Mix the first 6 ingredients
- Marinate in the refrigerator for 2-4 hours
- Then puree the mix in a blender
- When ready to serve, mix in the yogurt or the sour cream
- Put a couple of ice cubes in your soup bowl, before serving your soup
- Add a few radishes and a couple of slices of cucumber on the side, to munch on, for a little crunch and color. Along with a few lightly buttered crackers. A small sprig of parsley is a nice touch. Don't forget your toga!... LOL My friend stopped by yesterday and we enjoyed this out on the deck in the shade. She loved it and was going to stop at the store for cucumbers.
