Ingredients :
- 6 slice(s) bacon
- 1/2 cup(s) chopped onion
- 2 tablespoon(s) all-purpose flour
- 2 clove(s) garlic, minced
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) pepper
- 1 cup(s) sour cream
- 3 1/2 cup(s) corn
- 1 tablespoon(s) chopped fresh parsley
- 1/2 cup(s) half and half
- 1 tablespoon(s) snipped fresh chives
Intructions :
- Preheat oven to 350 degrees F. In a large skillet, cook the bacon until crisp. Drain, reserving 2 tablespoons of the drippings. Crumble the bacon and set aside
- Add the onion to the drippings and saute until tender
- Add the flour, garlic, salt, and pepper. Stir and cook until bubbly. Continue to stir and cook for 1 minute more
- Remove pan from the heat and stir in sour cream until smooth
- Add the corn, parsley, and half of the bacon. Mix well
- Add the half and half and stir. Return pan to the heat and cook until the corn is cooked and the mixture thickens up. Pour mixture into a 1-quart baking dish
- Bake for 20-25 minutes. Sprinkle with remaining bacon and chives.
