Savor the taste of summer with this delicious cracker tomato salad. Bursting with flavor, the sweet tomatoes are complemented by red onions and tangy cheese. Bound together with creamy mayonnaise, this salad is a true crowd havepleaser. It is a different way to use fresh tomatoes and is perfect for any summer event. This is not a recipe that can be made ahead of time. It is really good after being chilled for a few hours, but the next day, due to the water of the tomatoes, it gets too soggy. I have had this recipe for a few years. A lady gave it to me at a gospel singing. She had brought it and I was surprised at how tasty it was. I have used it quite often since. It is simple and good.
Ingredients :
- 12 ounce(s) good saltine cracker
- 3 - tomatoes, peeled, seeded, and diced
- 1 small purple onion, finely diced
- 1 - green bell pepper, diced
- 1 package(s) sharp cheese, shredded (8 oz)
- 1/4 cup(s) mayonnaise or as needed
Intructions :
- Break saltines in a bowl
- Mix in onion, green bell pepper, and cheddar cheese
- Add three tomatoes that are peeled, seeded, and diced
- Moisten with mayonnaise. Add salt and pepper to taste. Watch the salt
- Chill before serving
- Personal Serving Note: I have added small salad shrinp to this just before serving. Just be sure the shrimp are patted dry. I always serve in a bowl lined with romaine lettuce. DO NOT ADD TO MUCH MAYONNAISE. I have used this salad to stuff a ripe avocado for a women's meeting at church.
