Deborahs Super Delicious Sweet Potato Casserole Recipe @pinch

Sweet orange citrus flavor and pineapple are the stars of this sweet potato casserole. Apples and pecans add a nice crunch that pairs well with the sweet potatoes. Serve this as a holiday side dish or even a dessert! I have been perfecting this recipe for 25 years, maybe longer. I learned the basics from my grandmother and have added a few extra things along the way. I believe this is my best ever! I hope you enjoy it too.

Ingredients :
  • FRESH SWEET POTATO
  • 4-5 fresh sweet potatoes
  • 1/3 cup(s) dark molasses
  • 1/2 teaspoon(s) salt
  • CANNED SWEET POTATO
  • 1-2 can(s) sweet potatoes
  • REMAINING INGREDIENTS TO ADD
  • 1 cup(s) pineapple chunks, fresh or canned
  • 1/3 cup(s) dark molasses
  • 1/4 cup(s) orange juice, fresh
  • 1/2 cup(s) pecans
  • 1 large apple, peeled and cut in pieces
  • 1/3 cup(s) brown sugar
  • 1/2 stick(s) butter
  • 1 1/2 cup(s) water reserved from boiling potatoes or liquid from cans of potatoes
  • 2 tablespoon(s) corn starch or flour
  • TOPPING
  • 1 1/2 cup(s) mini-marshmallows
Intructions :
  • Your choice - If using fresh sweet potatoes, in a pot bring water, 1/3 cup molasses, and 1/2 tsp salt to a boil. Peel, cut into pieces, and boil until soft. Drain reserving 1 1/2 cups of the cooking liquid. OR: Use two large cans of sweet potatoes (yams). Drain liquid and reserve 1 1/2 cups. Put one of the above types of prepared sweet potatoes in a casserole dish sprayed with cooking spray. Set aside
  • With the reserved liquid, add 2 tablespoons corn starch (or flour). Whisk thoroughly to avoid any lumps. Then add to a saucepan along with the remaining ingredients. Simmer for approximately 15-20 minutes
  • Pour all liquid ingredients from the saucepan over the top of the sweet potatoes. Distribute as evenly as possible. Carefully, and gently, work into the potato spaces (do not stir). Bake at 350 F for 30 minutes or until all liquid is bubbling around the potato
  • Remove from oven and set on a plate. Distribute mini marshmallows over the top. Return to the oven. Broil, watching carefully, until marshmallows are a golden tan
  • *This can be made the day before. Complete all steps, except baking. Save in the refrigerator and bake the day you're serving. Put marshmallows on ONLY when the dish has been heated and you are preparing to serve.
