Down Home Pimento Cheese Sliders Recipe @pinch

If the South had a slider, these pimento cheese sliders would be it. The hamburger patty is filled with flavor and has a surprise of melted pimento cheese in the middle. Grilling the buns adds a little something to the overall texture and flavor. A dollop of pimento cheese on top as a condiment slightly melts. Super hearty, these sliders are a great game-day snack. If you have any cheese spread left over, it's delicious on its own in a sandwich as well! My mother said that every Southern "born and raised" person knows how tasty a soft piece of Sunbeam bread slathered with a nice layer of yummy pimento cheese tastes! This recipe was concocted as a tribute and special surprise to my wonderful mother who grew up in the South (North Carolina) and just loves pimento cheese. I know that youll agree once you take just one bite. They are simply wonderful!

Ingredients :
  • PIMENTO CHEESE
  • 1-1/2 cup(s) cheddar cheese
  • shredded
  • 4 ounce(s) cream cheese
  • softened
  • 1/8 teaspoon(s) cayenne pepper
  • 4 ounce(s) pimentos
  • chopped fine (well drained if using jarred)
  • 1-2 tablespoon(s) salad dressing or mayonnaise
  • HAMBURGER PATTIES
  • 1 1/2 -2 pound(s) 85% lean ground beef (chuck)
  • 1-2 tablespoon(s) Worcestershire sauce
  • 1 teaspoon(s) A1 steak sauce
  • 1/2 teaspoon(s) freshly ground sea salt
  • 1 teaspoon(s) Montreal steak seasoning (25% less sodium)
  • 1/2 tablespoon(s) freshly ground black pepper
  • 12 - pre-baked small square or round dinner or slider rolls
Intructions :
  • Make Pimento Cheese: Mix cheddar cheese
  • cream cheese
  • cayenne pepper
  • pimentos
  • and salad dressing (or mayo) in a bowl until combined. Stick this mixture into your refrigerated (if you can) while you are making up the slider patties.
  • Make patties: Combine beef
  • Worcestershire
  • A1 steak sauce
  • sea salt
  • Montreal steak seasoning
  • and ground pepper in a large bowl. Gently knead until well combined.
  • Divide the meat into 24 small thin patties.
  • To stuff the patties
  • drop approximately a teaspoonful of the pimento cheese and place it smack dab in the middle of the 12 prepared hamburger halves.
  • Pull up the sides of the burger to make a cheese pocket that will help to keep the yummy cheese from getting out. Take the other burger halves and cover the burger making sure to completely encompass the pimento cheese. You will have some cheese left over to use as a finish for your sliders.
  • To cook the sliders
  • place burgers onto a well heated grill (indoors or out) and cook until desired doneness (well-done is 170 degrees).
  • Toast the slider rolls or buns while the sliders are cooking. If using dinner rolls
  • cut in half to make a top and bottom for your burger. Place on a baking pan and broil until they are nice and golden brown. Watch them closely as you don't want them to burn.
  • To assemble the slider
  • place the pattie on top of the bottom halves of the toasted dinner rolls. Add a rounded small scoop of the leftover pimento cheese spread on top of the patty (a small cookie scoop works great).
  • Place the top bun on and cover with foil. Let them rest for 5 minutes and watch them disappear! ]
