Easy Chicken Fried Rice Recipe @pinch

A fast and easy homemade fried rice that's also easy on your wallet. Using leftover rice makes putting this dish together super simple. This fried rice has wonderful flavor from the sesame oil, garlic, and soy sauce. Tossed with a mixture of veggies, chicken, and eggs, this chicken fried rice is super hearty. Love this stuff; it goes with anything! I like to cook it with Teriyaki chicken so I can drizzle the sauce over it.

Ingredients :
  • 4 cup(s) rice
  • 1/2 pound(s) boneless chicken
  • 1 cup(s) peas and carrots, frozen
  • 1 small white onions
  • 2 clove(s) garlic, minced
  • 2 large eggs
  • 2 tablespoon(s) sesame oil
  • 1/4 cup(s) soy sauce
Intructions :
  • Cut chicken into small bite-sized pieces
  • Fry chicken in a small pan until no longer pink; set aside
  • Heat sesame oil in 10 inch skillet on medium heat
  • Add vegetables. Stir fry until tender
  • Crack eggs into skillet and scramble
  • Add rice and chicken (already cooked)
  • Add soy sauce
  • Remove from heat and mix in soy sauce. Yes, it's that simple :)
