This homemade granola has great flavor. It's salty and sweet thanks to the maple syrup and honey. Fresh from the oven it has just the right amount of crunchiness. A healthier snack or breakfast option. Enjoy with some milk as cereal, sprinkle on top of yogurt, or just grab a handful when you want just a little something. This is a delicious recipe that is much healthier and fresher than the purchased granola. You control the sweetening. You can use all maple syrup to make it vegan. Switch the nuts if you prefer. I don't put dried fruit in it until after it is cooked. The fruit would dry up too much. Add raisins, chopped apricot, berries, or whatever you like after the granola has cooled. Can be used to top ice cream or other desserts.

Ingredients :
  • 6 cup(s) old-fashioned rolled oats
  • 1 cup(s) almonds
  • chopped
  • 1 cup(s) walnuts
  • chopped
  • 1 cup(s) raw
  • unsalted pepitas (hulled pumpkin seeds)
  • 1/2 cup(s) maple syrup
  • 6 tablespoon(s) canola oil or coconut oil
  • 1/4 cup(s) honey
  • 1 teaspoon(s) ground cinnamon
  • 1 teaspoon(s) pure vanilla extract
  • 1 teaspoon(s) salt
Intructions :
  • Preheat the oven to 325 degrees F. Line a roasting pan or large baking sheet with parchment paper. Combine oats
  • almonds
  • walnuts
  • and pepitas in a large bowl.
  • Whisk oil
  • maple syrup
  • honey
  • cinnamon
  • vanilla
  • and salt in a medium bowl until blended. (Measure the oil first
  • then use the residue in the cup to grease the measuring cups for the maple syrup and honey.)
  • Pour over the oat mixture and toss to coat.
  • Spread the mixture in the prepared pan.
  • Bake
  • stirring every 10 to 15 minutes until lightly and evenly browned and starting to dry out
  • 50 minutes to 1 hour.
  • Do not leave the granola unattended during this time. It can overcook very easily if not stirred regularly.
  • When it is lightly and evenly browned throughout remove from oven and cool completely in the pan. When cool it can be stored for future use.
