Serve these sweet potato tidbits as a side dish or a snack. If you dip them in honey, as suggested, they could almost be a dessert. The batter is seasoned with sweet and savory spices along with a touch of sugar. Once fried, the batter crisps and gives the sweet potato fries a nice balance of sweet and savory. I looked and looked for a recipe for fried sweet potatoes. I was unhappy with any recipes I found, so I came up with my own. These were a hit with ALL my kids. And we, as parents, know how hard that is. I have 4 kids, and next time I will be doubling my recipe.

Ingredients :
- 1/2 cup(s) pancake mix (I use Bisquick)
- 1 large egg
- 1 1/4 cup(s) milk (needs to be thin, if not thin enough add more milk)
- 1 teaspoon(s) garlic powder
- 1 tablespoon(s) cinnamon
- 1 tablespoon(s) granulated sugar
- 1/4 teaspoon(s) cayenne pepper (optional)
- 2 large fresh sweet potatoes
- - vegetable oil
- - deep fryer or Fry Daddy
Intructions :
- Mix the first 7 ingredients together. Make sure the batter is thin. If not thin enough, add a little more milk
- Cut sweet potatoes into thin fries and then into short pieces
- Add sweet potatoes into your batter and stir until well-coated
- Heat oil to 375 degrees. Drop by spoonfuls into the hot deep fryer and fry for 7 minutes
- When deep golden brown in color, remove and place them on a paper towel to drain excess oil. Let cool for about 10 min. I serve mine with ranch dressing or honey.
