Green Green Salad Recipe @pinch

This delicious green green salad is fun! Filled with all kinds of green veggies, it has a satisfying crunch and is super good. Raw broccoli bulks up the salad and gives structure. Cucumber and zucchini add a touch of freshness. We loved the slightly smoky flavor of the bacon. The light ranch dressing helps pull all the flavors together. It's a healthier salad everyone will enjoy. It's a tasty way to eat your veggies. I developed this salad for a St. Patrick's Day party. We all brought 'green' foods. Someone actually brought green potato soup, but I think some of the other dishes were better received! We all laughed. This one is good and definitely healthy.

Ingredients :
  • 2 cup(s) fresh broccoli florets
  • 1 large seedless cucumber
  • cut in chunks
  • 1 small zucchini
  • cut in chunks
  • 3 - green onions with tops
  • thinly sliced
  • 2 cup(s) shredded fresh spinach leaves
  • 1/4 cup(s) cooked
  • crumbled bacon
  • 1 cup(s) light ranch dressing
  • 1 - green pepper sliced into rings
  • - several large lettuce leaves
  • - parsely sprigs
Intructions :
  • Line a large clear glass salad bowl with lettuce leaves.
  • Mix together broccoli
  • cucumber
  • zucchini
  • green onions
  • spinach
  • and bacon.
  • Fold in dressing and coat everything well.
  • Mound mixture in the salad bowl on top of lettuce leaves. Top with green pepper rings and parsley sprigs. Refrigerate before serving.
