This delicious green green salad is fun! Filled with all kinds of green veggies, it has a satisfying crunch and is super good. Raw broccoli bulks up the salad and gives structure. Cucumber and zucchini add a touch of freshness. We loved the slightly smoky flavor of the bacon. The light ranch dressing helps pull all the flavors together. It's a healthier salad everyone will enjoy. It's a tasty way to eat your veggies. I developed this salad for a St. Patrick's Day party. We all brought 'green' foods. Someone actually brought green potato soup, but I think some of the other dishes were better received! We all laughed. This one is good and definitely healthy.
Ingredients :
- 2 cup(s) fresh broccoli florets
- 1 large seedless cucumber
- cut in chunks
- 1 small zucchini
- cut in chunks
- 3 - green onions with tops
- thinly sliced
- 2 cup(s) shredded fresh spinach leaves
- 1/4 cup(s) cooked
- crumbled bacon
- 1 cup(s) light ranch dressing
- 1 - green pepper sliced into rings
- - several large lettuce leaves
- - parsely sprigs
Intructions :
- Line a large clear glass salad bowl with lettuce leaves.
- Mix together broccoli
- cucumber
- zucchini
- green onions
- spinach
- and bacon.
- Fold in dressing and coat everything well.
- Mound mixture in the salad bowl on top of lettuce leaves. Top with green pepper rings and parsley sprigs. Refrigerate before serving.
