Grilled Chicken Kabobs Recipe @pinch

Full of flavor, these super-easy grilled chicken kabobs are delicious. The Italian dressing marinates and makes the chicken breasts tender and juicy. With just the right amount of seasonings, after the kabobs are assembled and grilled they're quite tasty. We used the suggested veggies but you could easily substitute with what's in season or what your family enjoys. A nice option for summer lunch or dinner. I love cooking with my honey and we just had the best time putting these together! The depth of flavor was unexpected and delicious.

Ingredients :
  • 1 1/2 pound(s) chicken breasts
  • 1/2 - sweet onion
  • 1/2 - sweet red pepper
  • 1/2 - sweet green pepper
  • 8 - whole fresh mushrooms
  • 1 small zucchini
  • 1 small yellow squash
  • 6 medium cherry tomatoes
  • - roasted red pepper Italian with Parmesan salad dressing
  • - blackened seasoning
  • - garlic salt
Intructions :
  • Wash veggies. Cut peppers into 1-inch pieces, cut zucchini and squash into 1/2-inch thick slices.
  • Cut chicken breasts into 2-inch cubes.
  • Skewer veggies and meat
  • alternating to taste. Place in a shallow baking pan.
  • Drizzle roasted red pepper Italian with Parmesan dressing over prepared skewers.
  • Sprinkle with blackened seasoning and garlic salt.
  • Marinate for 30 mins to 1 hour.
  • Grill over low heat for 30 to 40 minutes.
