Ingredients :
  • 1-1 3/4 pound(s) pork tenderloin
  • 3 slice(s) bacon
  • BLUEBERRY SAUCE
  • 2 tablespoon(s) butter
  • 2 medium onions
  • sliced
  • 1/2 teaspoon(s) salt and pepper
  • 2 tablespoon(s) sugar
  • 1/4 cup(s) sweet sherry or chicken broth
  • 2 tablespoon(s) balsamic vinegar
  • 1 cup(s) fresh blueberries
  • 1 cup(s) cherry or grape tomatoes
  • cut in half
Intructions :
  • For the tenderloin
  • wrap the tenderloin in the bacon slices. Grill over medium-hot coals
  • covered with grill lid
  • for 20 to 30 minutes.
  • BLUEBERRY SAUCE: Melt the butter in a large skillet over medium heat. Add the onions
  • salt
  • and pepper. Saute until onions are golden brown
  • about 10 minutes. Stir in the sugar and cook for 2 minutes
  • stirring constantly.
  • Stir in the wine and vinegar. Bring to a boil. Boil gently for 3 minutes. Stir in the blueberries and tomato halves. Cook just until heated through.
  • To serve
  • cut the tenderloin into thin slices and place it on a serving plate. Spoon the blueberry sauce over the top.
