These grilled shrimp and sweet potatoes are a yummy dish guaranteed to impress. Lime and garlic pair nicely with the spiced rum in the shrimp marinade. Once grilled, the shrimp have a robust flavor. The grilled sweet potatoes are fantastic straight off the grill, but the maple lime sauce sends them over the top. It's sweet with a little tang. So good! Sprinkling pecans adds a little nuttiness and the goat cheese is a tangy contrast to the sweet maple. This does take a little planning, but worth the time. A wonderful summer dinner. Ingredients :
  • SPICED RUM GRILLED SHRIMP
  • 1 1/2 pound(s) shrimp
  • peeled and deveined
  • 1 large lime juice
  • 1 large lime
  • zest
  • 1/4 cup(s) olive oil
  • extra virgin
  • 4 tablespoon(s) spiced rum
  • 1 teaspoon(s) red pepper flakes
  • 2 tablespoon(s) cilantro
  • fresh
  • chopped
  • 3 clove(s) garlic
  • minced
  • - Kosher salt
  • to taste
  • GRILLED SWEET POTATO
  • 3 large sweet potatoes
  • 1/4 cup(s) maple syrup **more if you wish**
  • 2 ounce(s) pecans
  • chopped
  • 1 tablespoon(s) fresh lime juice
  • 1 teaspoon(s) cinnamon
  • 2 ounce(s) crumbled goat cheese
  • 2 tablespoon(s) olive oil
  • extra virgin...for brushing
Intructions :
  • In a mixing bowl
  • combine all the ingredients for the spiced rum grilled shrimp.
  • Thread shrimp on pre-soaked skewers. Let shrimp marinate for 30 minutes up to an hour.
  • Boil sweet potatoes until fork tender. Set potatoes aside to cool. Remove skins and slice in 1/4 inch slices. Brush both sides of the sweet potatoes with extra virgin olive oil.
  • In a small mixing bowl
  • combine maple syrup
  • lime juice
  • and cinnamon. Whisk well.
  • On a hot grill
  • cook potatoes for 2-3 minutes on each side. Place grilled sweet potatoes on a warm platter.
  • On a hot grill
  • cook shrimp for 1-2 minutes on the first side then flip and bush shrimp with the marinade and cook the second side for about 30-45 seconds. Do not overcook. Place skewers on a platter.
  • Drizzle the maple syrup mixture on the potatoes. Top off with pecan pieces and goat cheese. Garnish with cilantro.
