Ground Beef & Potato Casserole Recipe @pinch

We love a simple and hearty meal. This ground beef and potato casserole is one of those meals. The potatoes bake into the creamy sauce and the onions add some flavor. Ground beef is not only a budget-friendly choice, but it also adds heartiness to the casserole. We used green beans, but any veggie would work. On top is a ton of gooey cheese. A quick and budget-friendly weeknight meal. Found a similar recipe on the internet and tweaked it. Made it the first time tonight for dinner - was a big hit as there were no leftovers!

Ingredients :
  • 2 pound(s) ground beef
  • 1 small onion
  • diced
  • 4 medium potatoes
  • bakers
  • 2 can(s) cream of mushroom soup (10.5 oz each)
  • 1 cup(s) sour cream
  • 1 cup(s) milk
  • 2 cup(s) cheddar cheese
  • shredded
  • - salt and pepper
  • to taste
  • 1 cup(s) peas or green beans (optional)
Intructions :
  • Brown ground beef and onion
  • drain fat. Season with salt and pepper to taste.
  • Slice potatoes very thin (I use a mandolin).
  • Mix soup
  • sour cream
  • and milk.
  • In a 13x9 casserole
  • place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie
  • if desired.
  • Pour on half the sauce.
  • Top with 1 cup of cheddar cheese. Repeat the layers.
  • Cover with foil and bake at 350 for 1 hour. Remove foil and bake for another 10 minutes or until cheese is golden brown.
