These yummy pumpkin cookies for Halloween are super moist and delicious. Most pumpkin cookies are very soft. Adding oatmeal to the batter gives the cookies a bit of texture. Topping with a bit of frosting and sprinkles makes them especially festive. Adults and kids will love these... a tasty fall treat. I made these cookies for a friend's children, as they aren't allowed to eat candy or anything too unhealthy. The kids loved them and my friend approved! You can use canned cream cheese or sugar-free frosting, or make a homemade cream cheese frosting with reduced-fat cream cheese.

Ingredients :
- 1 box(es) boxed spice cake mix (18.25 oz)
- 1 can(s) pumpkin puree (not pie filling) (15 oz)
- 2 large egg whites
- 1 cup(s) quick cooking oatmeal
- 1 cup(s) frosting of your choice
- - festive sprinkles
Intructions :
- Preheat the oven to 350 degrees F. Lightly spray a large cookie sheet with cooking spray or line with parchment paper.
- In a large bowl stir together the cake mix
- pumpkin
- egg whites
- and oatmeal until combined.
- Drop heaping tablespoonfuls of batter onto the prepared pan.
- Bake cookies for 8-10 minutes or until slightly firm yet cake like when gently pressed. Cool on wire racks.
- Once cookies are cooled completely
- frost cookies.
- Decorate with sprinkles. Makes about 24 cookies.
