A healthy way to make chicken strips. Using Fiber One cereal as the coating gives the chicken a nice crunch as is a lot healthier than other coatings. You taste the simple seasonings, but nothing is too overpowering. If you like salt, you may want to add a touch extra. Once baked, the outside is crisp but the chicken is tender and juicy inside. We served ours with salad and sugar-free honey mustard for a delicious dinner. If you're feeding a crowd, the recipe can easily be multiplied. I have to say, this is my favorite recipe and my family just loves them. They are only 277 calories for the whole recipe. A must add to your recipe file.... Enjoy and a "Healthy Heart."

Ingredients :
- 6 ounce(s) raw skinless boneless lean chicken breast
- cut into 8 strips
- 1/2 cup(s) Fiber One bran cereal (original)
- 1/4 cup(s) fat-free liquid egg substitute
- 1/4 teaspoon(s) powdered garlic
- 1 teaspoon(s) original blend Mrs. Dash
- 1/2 teaspoon(s) black pepper
Intructions :
- Preheat oven to 375 degrees. Using a blender or food processor
- grind Fiber One to a breadcrumb-like consistency.
- Add garlic powder
- original blend Mrs. Dash
- and black pepper to the crumbs.
- Place crumbs in one small dish and egg substitute in another.
- Next
- coat raw chicken. First with the egg.
- Then with crumbs.
- Place strips on a baking pan sprayed with nonstick spray (Pam). Add a light mist of nonstick spray on top.
- Place in the oven and cook for 10 min.
- Then turn the strips over and spritz with another light mist of nonstick spray. Cook for an additional 7 to 10 minutes
