Holiday Broccoli & Rice Casserole Recipe @pinch

Super hearty, you could almost eat this broccoli and rice casserole as a meal. If you love cheese, you'll love this broccoli casserole. It's super cheesy! Filled with broccoli, we can see why it's a must on Kari's holiday menu. My family has been making this for years. We don't have a holiday without it. It is so good even all the kids love it.

Ingredients :
  • 1 stick(s) butter
  • 3 stick(s) celery
  • chopped fine
  • 2 can(s) cream of chicken soup (10.5 oz each)
  • 1 1/2 jar(s) Cheez Whiz (15 oz)
  • 1 bag(s) broccoli florets
  • chopped (16 oz)
  • 2 cup(s) Minute Rice
  • cooked
  • 3/4 can(s) chicken broth or stock (14.5 oz can)
  • - salt & pepper
  • to taste
Intructions :
  • Preheat oven to 350 degrees.
  • Melt butter in a Dutch oven. Then add your celery and cook until tender.
  • Add your 2 cans of soup
  • Cheez Whiz & broth. Cook until all melted together. Then season to taste with salt and pepper.
  • Now add your broccoli and mix. Broccoli can still be frozen
  • it will thaw at this point.
  • Add your rice and mix.
  • Pour into a greased baking pan and cover.
  • Now put it in the oven and cook for one hour.
  • In the last 10 to 15 minutes of cooking
  • remove the lid or foil and let the top brown a little.
