If you want to try a new cookie recipe this Christmas, try this simple sugar cookie. They're made with ricotta cheese, which makes a light and tender cookie. The light, creaminess of these cookies iced with frosting is irresistible. Decorate with colored sprinkles for a festive cookie. I can't even remember where I learned this recipe, I have been making them every Christmas for 20 + years, and my family loves them. Using ricotta in the batter makes them so soft and almost cake-like.
