Layered Fresh Apple Cake Recipe @pinch

This fresh apple Bundt cake is a must-have for any gathering, but most certainly in the fall. The aroma will make your kitchen smell like it's time for Halloween and bobbing for apples. Orange juice gives this moist cake an extra layer of flavor. We love the bits of cinnamon sugar-coated fresh apples throughout the cake. It's a really nice surprise when you get one in a bite. Enjoy this cake quickly... once everyone tries it, it will disappear fast! No matter where my brother was stationed in the Navy, this cake was always at the top of his care package request list.

Ingredients :
  • FOR APPLE MIXTURE
  • 4 large baking apples
  • peeled and diced
  • 2 tablespoon(s) cinnamon
  • ground
  • 5 tablespoon(s) sugar
  • FOR CAKE BATTER
  • 3 cup(s) all-purpose flour
  • 2 cup(s) sugar
  • 3 teaspoon(s) baking powder
  • 1/3 teaspoon(s) salt
  • 1 cup(s) cooking oil
  • 4 large eggs
  • 1/4 cup(s) orange juice
  • fresh
  • 2 1/2 teaspoon(s) vanilla extract
  • FOR TOPPING
  • 1 cup(s) powdered sugar
Intructions :
  • Toss apples
  • cinnamon
  • and 5 Tbsp of sugar together to coat. Then set aside.
  • In a large mixing bowl
  • beat together oil and sugar. Add eggs one at a time.
  • Sift flour
  • baking powder
  • and salt together. Then add to sugar and egg mixture
  • alternately with orange juice and vanilla.
  • Grease and flour a tube or Bundt pan. Put in a layer of batter
  • then a layer of apple mixture
  • another layer of batter
  • another layer of apples
  • then finish with a layer of batter.
  • Bake at 350 F for 1 1/2 hours. Cool 1 hour in the pan.
  • Then invert onto a serving plate. Sift with powdered sugar and serve with hot coffee or tea.
