Leftover Turkey Broccoli Bake Lyn* Recipe @pinch

When wondering what to make with leftover turkey, give this broccoli casserole a try. It is savory, creamy, cheesy and really easy to make. The Swiss cheese and butter cracker crumbs on top are a nice finish to the dish. This is a filling casserole and a great way to use Thanksgiving leftovers. We were a bit tired of turkey on the 3rd day, so I came up with a way to change up the flavor. Swiss cheese did the trick! My hunny thinks he doesn't like Swiss cheese and he loves this dish. Go figure... LOL.

Ingredients :
  • 1 cup(s) long grain rice, uncooked
  • 3 cup(s) leftover turkey, chopped
  • 2 cup(s) broccoli, chopped and cooked (can use 2 10 oz frozen)
  • 1 can(s) cream of mushroom soup (10 oz)
  • 1 1/2 cup(s) milk, whole
  • 1/2 cup(s) turkey broth
  • 1/2 cup(s) mayonnaise, (I use Best Foods or hellmans)
  • 2 - stalks of celery, chopped
  • 1/2 medium onion, chopped
  • 8 ounce(s) Swiss cheese, shredded and divided (save 4 oz)
  • TOPPING:
  • - handful of Ritz crackers, crushed
  • 4 ounce(s) Swiss cheese, saved
Intructions :
  • Heat oven to 350. Grease 9x13 baking dish
  • Put in a large bowl all ingredients EXCEPT cheese; stir
  • Add 4 oz cheese and stir again
  • Pour into greased 9x13 pan
  • Cover with aluminum foil. Bake for 45-50 minutes until rice is done
  • Uncover and top with crushed crackers and 4 oz of cheese
  • Bake another 10 minutes until cheese is melted and browned.
