We loved the date and lemon flavor combination in these muffins. A tasty muffin that would be good for breakfast or afternoon tea. They are lightly sweet with nice lemon flavor and bits of dried dates in every bite. The lemon glaze adds an extra touch of lemon flavor and sweetness. Yum! These are very tasty and the muffins were a hit with the family. I thank my grandma for this recipe, God bless her. My mom saved this recipe for me along with many others. I hope you enjoy these. I love the texture of these muffins. I have made them with other fruit that has been dried, fresh fruit and nuts as well. I even make them with trail mix once (just chop it up first and dust with flour).
Ingredients :
- 2 cup(s) all-purpose flour
- 1/3 cup(s) dark brown sugar, packed
- 1 teaspoon(s) baking powder
- 1 teaspoon(s) baking soda
- a pinch(es) salt
- 3/4 cup(s) Dairy sour cream
- 3/4 cup(s) packaged pre-cut dates
- 2 tablespoon(s) melted butter
- 3 tablespoon(s) lemon juice
- 1 tablespoon(s) grated lemon rind
- 1 large egg
- OPTIONAL GLAZE
- 1 cup(s) powdered sugar
- 1 teaspoon(s) soft margarine
- lemon juice
Intructions :
- Preheat oven to 400 F. Place cupcake papers in a muffin pan (cupcake pan). Spray papers with non-stick spray. Set aside
- Combine the flour, brown sugar, baking powder, baking soda; and salt in a medium bowl; mix to blend
- In a separate medium bowl combine remaining ingredients. Mix well to combine
- Add this to the flour mixture; batter will be dough-like
- Divide batter in half in the bowl, then 1/2 again (makes it easier to evenly distribute)
- This should fill the paper cups to the top
- Bake for 25 minutes
- Test for doneness with a wooden toothpick. Cool completely
- Eat as is
- Or, you can frost them. Mix 1 cup powdered sugar, 1 teaspoon soft margarine, and enough lemon juice to make spreadable
- Drizzle or spread on the muffins.
