Sweet potato pie is a Southern favorite, and this recipe puts a twist on the popular dessert. Making the pie in a homemade vanilla wafer crust gives the pie a different feel. Adding eggnog instead of a lot of spices gives this easy pie a holiday feel and helps to make the dense filling creamy. The eggnog flavor is subtle. I came up with this Eggnog Sweet Potato Pie with a vanilla wafer crust recipe because I love cooking with eggnog and I really like sweet potato pie. But, I don't care for pie crust. I usually use a graham cracker crust. But I was also making a cheesecake and only had enough graham crackers for one dessert. I did have a box of vanilla wafers. The result, yummmmm!
Ingredients :
- CRUST
- 70 - vanilla wafer cookies
- 2 tablespoon(s) granulated sugar
- 2 tablespoon(s) dark brown sugar
- 1/2 cup(s) butter, melted
- PIE FILLING
- 3/4 cup(s) white sugar
- 1/2 cup(s) light brown sugar
- 1/2 teaspoon(s) freshly grated nutmeg
- 3 - sweet potatoes, cooked and mashed (about 3 cups)
- 1/2 cup(s) eggnog
- 2 large eggs, beaten
- 1/2 cup(s) unsalted butter, softened
- 2 teaspoon(s) pure vanilla extract (or 1 vanilla bean pod)
- 1/2 teaspoon(s) coarse kosher salt
Intructions :
- For crust, mix vanilla wafers and the sugars in a food processor, while drizzling in the butter. Mix until well blended
- Press into the sides and bottoms of 2 deep dish 9 pie pans. Set aside
- In a large bowl, combine sugars and nutmeg. Mix well. Stir in mashed sweet potatoes. Add eggnog, beaten eggs, butter, vanilla, and salt. Mix until smooth. (I recommend tasting the filling to make sure it sweet enough. Every now and then you\u2019ll get a batch of sweet potatoes that aren\u2019t too sweet and require more sugar)
- Pour the filling mixture into the two cookie crusts
- Bake at 375 F for 30-35 minutes until the filling sets.
