Mild Cheese Fondue Recipe @pinch

Fondue isn't just for special occasions (and not just made of chocolate). This recipe is so easy, you will be looking for reasons to make it. The cheese combination is smooth and almost sweet. They're mild and not too salty. There is a slight tang from the Colby. It's so versatile you can dip anything from cured meats to apple slices and anything in between. A nice mild cheese for those not into getting into the unknown (stronger) cheeses that you may find in fondue. A nice blend of cheese that you can dip bread, potatoes or veggies into.

Ingredients :
  • 1/4 cup(s) butter
  • 3 tablespoon(s) all-purpose flour
  • 1/2 cup(s) chicken broth
  • 1 cup(s) heavy cream
  • 1 1/2 cup(s) Swiss cheese
  • shredded
  • 1 1/2 cup(s) Havarti cheese
  • shredded
  • 1 cup(s) colby
  • shredded
  • 1 tablespoon(s) lemon juice
Intructions :
  • In a large sauce pan
  • over medium heat
  • melt butter.
  • Add flour, cook and stir until bubbly
  • about 2-3 minutes.
  • Stir in chicken broth and cream.
  • Cook over medium heat until thickened.
  • Add cheeses
  • about 1 cup at a time
  • stirring or whisking constantly until melted and blended.
  • Cook for a few minutes until slightly thickened. You may need to add more cheeses to reach the desired consistency.
  • Stir in lemon juice until smooth.
  • Pour into heated fondue pot set over a candle or sterno.
  • Serve with bread sticks and fresh vegetables
  • boiled or baked cubed potatoes or cubed toasted bread for dipping.
