Orecchiette pasta and sausage are the stars of this meal. There's also onion and garlic that give a good base of flavor. Instead of a heavy sauce, there's a thin cream and cheese sauce that's just enough to coat the pasta, sausage, and broccoli and add a nice flavor. This is a hearty pasta dinner that can quickly be whipped up. Orecchiette are little bowl-shaped pasta 'ears' that hold creamy sauces very well. For this, I used a chicken-garlic-spinach sausage. You can use any kind, really.

Ingredients :
- 10 ounce(s) orecchiette pasta
- 2 tablespoon(s) olive oil
- 1 small onion
- minced
- 2 clove(s) garlic
- minced
- 1 small crown of broccoli
- chopped
- including stem diced
- 2-4 - sausage links
- such as chicken sausage
- chicken-garlic sausage
- chicken-spinach-feta sausage
- cut into small pieces
- 1 cup(s) chicken stock
- 1/2 cup(s) heavy cream
- 1/2 cup(s) good grated cheese such as Romano or Parm-Reggiano
- - fresh ground pepper and (optional) sprinkle of dried pepper flakes
Intructions :
- Cook pasta according to directions.
- In a medium saute pan
- saute onion and garlic in olive oil until onions are translucent. Add broccoli and saute for 3-4 minutes
- until it just starts to soften.
- Add sausage and saute for 3 min. When skins start to curl a bit...
- Add broth and bring to a boil for 10 min.
- Add cream.
- Then add pasta and turn the heat to low. Simmer for 5 min.
- Add cheese and stir well. Add pepper and pepper flakes
- if desired.
