Peanut Butter Cheesecake Brownie Pie Recipe @pinch

This recipe takes two favorite desserts have brownies and cheesecake have and puts them into pie form. Plus, It is a peanut butter cheesecake that adds to the dish. The flavors of peanut butter and chocolate, coupled with the texture of a fudgy brownie and creamy cheesecake, make this pie irresistible. It is easy to make and a unique dessert everyone will be eager to try. I wanted to make dessert the other night, so I looked in the fridge to see what I had. This is what I came up with. Really easy and quick to make. The hardest part is letting it cool!

Ingredients :
  • CRUST
  • - refrigerated pie crust, room temperature
  • BROWNIE
  • 1 - brownie box mix plus ingredients per package (I used Betty Crocker Supreme and saved the chocolate syrup for the topping)
  • CHEESECAKE FILLING
  • 8 ounce(s) cream cheese, room temperature
  • 1/2 cup(s) confectioners' sugar
  • 3/4 cup(s) peanut butter
  • 1/2 cup(s) milk
  • 1 - egg
  • 1 teaspoon(s) vanilla extract
  • TOPPING
  • - chocolate syrup
  • - semi-sweet mini chocolate chips
  • - whatever sounds good to you(i.e. peanuts, coconut, etc.)
Intructions :
  • Preheat oven to 350. Press room temperature pie crust into 9 pie pan. Set aside
  • Cream milk and cream cheese with electric mixer on a lower speed until smooth
  • Add confectioners' sugar, peanut butter, egg, and vanilla. Mix until blended
  • Mix brownies as directed on box. Pour half of the brownie mix into prepared pie crust
  • Next, spoon all of the cream cheese mixture on top of the brownie layer
  • Pour the rest of the brownie mixture on top. Smooth over with rubber spatula
  • Cover the edges of pie with aluminum foil to prevent crust from over browning. Bake 35-40 minutes
  • After 35-40 minutes, remove foil from pie and bake an additional 10-15 minutes (pie may crack on top, this is okay)
  • Remove pie from the oven
  • Sprinkle with mini chips. Let pie cool completely (3 hours on the counter, hour and a half in the fridge). After the pie is cool, you can drizzle with the chocolate syrup if your boxed brownie included the chocolate packet
  • Slice and enjoy. Watch out! It's decadent.
