Peanut Butter Crunch Brownies Recipe @pinch

These peanut butter brownies are not your traditional brownies. Each piece is 3 layers of heaven! They are gooey, creamy, crunchy, rich, and delicious. From the chocolate flavor to the peanuts to the delectable crunchiness... this is Blue Ribbon all the way. The chocolate and peanut butter havecovered Rice Krispies on top (along with the peanut butter cups) make this brownie recipe rich and amazing! This recipe originated from a blog page, Edesia's Notebook, and I adjusted it from using a brownie mix to making the brownies from scratch.

Ingredients :
  • 1 cup(s) butter, melted
  • 2 cup(s) sugar
  • 2 teaspoon(s) vanilla
  • 4 large eggs
  • 1 cup(s) all-purpose flour
  • 3/4 cup(s) cocoa powder
  • 1/2 teaspoon(s) baking powder
  • 8 large Reese's peanut butter cups (or I've used 24 mini cups), roughly chopped
  • 1/2 cup(s) salted peanuts, chopped
  • 1 cup(s) semi-sweet chocolate chips
  • 1 tablespoon(s) butter
  • 1 1/2 cup(s) peanut butter
  • 1 1/2 cup(s) Rice Krispie cereal
Intructions :
  • Preheat oven to 350. Line a 9x13 pan with foil so that a small amount hangs over the edge. Spray with non-stick spray. In a mixer, combine butter, sugar, vanilla, and eggs
  • Add flour, cocoa powder, and baking powder
  • Pour into prepared pan
  • Bake for about 20 - 25 minutes
  • While brownies are baking, chop peanut butter cups and peanuts
  • After the brownies have been baked for 20-25 minutes, top them with the chopped peanut butter cups and the chopped peanuts. Return to oven and finish baking for 6 - 10 minutes, until a wooden pick can be inserted and comes out clean
  • While the brownies are finishing, make the topping. In a microwave-safe bowl, put chocolate chips, butter, and peanut butter and cook until melted (about 45 seconds)
  • Stir well until the mixture is smooth
  • Add the Rice Krispie cereal and stir to coat evenly
  • When the brownies are done, remove them from the oven and top them with chocolate-covered Rice Krispie cereal, spreading evenly over the top. Set aside and let cool for about an hour. Then move to the refrigerator and chill for at least 2 hours
  • To remove, lift out of the pan by pulling up on the foil. Pull the foil back from the sides of the brownies and cut into bars. Enjoy!
