These pecan pie bars have all the flavors of pecan pie but can be made in a snap. The base is a delicious shortbread cookie crust. Then there is a gooey and sweet topping filled with chopped pecans. Simple to make, this recipe is an easy way to enjoy the flavors of pecan pie. I call these 'lazy girl' pecan pie bars. Bring these to a gathering, and you'll never have leftovers. Which, in my opinion, is not always a good thing. Make sure to keep some for yourself, or you might miss out!

Ingredients :
- CRUST
- 3 cup(s) all-purpose flour
- 1/2 cup(s) granulated sugar
- 2 stick(s) butter
- 1/2 teaspoon(s) salt
- PECAN PIE BAR FILLING
- 4 large eggs
- 1 1/2 cup(s) light corn syrup
- 3/4 cup(s) granulated sugar
- 3/4 cup(s) brown sugar
- firmly packed
- 3 tablespoon(s) butter
- melted
- 1 1/2 teaspoon(s) vanilla extract
- 2 1/2 cup(s) pecans
- in pieces
Intructions :
- Preheat oven to 350 degrees. In a large bowl or standing mixer combine the flour
- 1/2 cup sugar
- 1/2 tsp salt
- and 2 sticks of butter. Mix well. The mixture will be dry and crumbly.
- In a large pan
- preferably 10x15
- grease the bottom of the pan or I prefer to use parchment paper to line. Pour the crust mixture onto the greased pan and press firmly to create a crust. Bake in the oven for 10 minutes at 350 degrees.
- In a separate bowl
- or standing mixer with bowl
- combine eggs
- corn syrup
- sugar
- brown sugar
- melted butter
- vanilla extract
- and chopped pecans; mix well. Set aside until the crust is done baking.
- After 10 minutes
- remove the crust from the oven.
- Pour the prepared pecan filling mixture on top of the hot crust. Use a spatula or spoon to distribute evenly.
- Place back in the oven. Bake for 35 minutes at 350 degrees.
- Let cool and serve.
