Pecan Pie Bars Recipe @pinch

Less messy than a pecan pie, these pecan pie bars are just as delicious. Crunchy with a creamy center, they will satisfy any salty havesweet craving. An easy dessert when you feel like pecan pie but want a party dessert people can just grab. They are addictive! It is that time of year. I love the fall and also the smell of these pecan pie bars cooking in the oven. Heaven!

Recipe Cuisine: American Recipe Category: Pies Yield: 6 Servings
Ingredients :
  • 3 cup(s) all-purpose flour
  • 1/2 cup(s) white sugar
  • 1/2 teaspoon(s) salt
  • 1 cup(s) butter
  • 4 large eggs
  • 1 1/2 cup(s) light corn syrup
  • 1 1/2 cup(s) white sugar
  • 3 tablespoon(s) butter
  • 1 1/2 teaspoon(s) vanilla extract
  • 2 1/2 cup(s) chopped pecans (I leave some of them whole)
Intructions :
  • Preheat oven to 350 degrees. Line a 10x15 inch jelly roll pan with parchment paper and leave a little overhang to make it easier to lift bars out. Lightly spray with Pam
  • In a large bowl, stir together the flour, 1/2 cup sugar, and salt. Cut in the 1 cup of butter until the mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan and press in firmly
  • Bake for 20 minutes in the preheated oven
  • While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 1/2 cups sugar, 3 tablespoons butter, and vanilla until smooth. Stir in the chopped pecans. Spread the filling evenly over the crust as soon as it comes out of the oven
  • Bake for 25 minutes in the preheated oven or until set. Allow to cool completely on a wire rack before slicing into bars. I also loosen the edges of the whole thing with a knife. They can be a little sticky trying to get them out of the pan!
