A wonderfully quick and easy summer side dish. The summer squash is tender. We loved the sweet carrots and slightly caramelized onions. Balsamic vinegar adds a slight tang to the dish. A delicious way to enjoy summer squash. If you want a quick and flavorful yellow squash side dish, this is it! Takes a few minutes and is not your momma's mushy stewed squash! Everyone who complains about summer squash LOVES this!

Ingredients :
- 3 large summer squash
- 2 large carrots
- 1 large sweet onion
- 3-4 tablespoon(s) balsamic vinegar
- 2 tablespoon(s) olive oil
- 1-2 teaspoon(s) Lawry's seasoning salt
- 1 teaspoon(s) cracked black pepper
- 1 dash(es) garlic powder
Intructions :
- Slice yellow squash and onion in 1/2
- slice
- and halve.
- Use a mandolin and slice the carrots into thin slices.
- Mix all veggies together and add spices.
- Heat olive oil in a skillet (I use a copper wok on a gas range).
- When very hot
- add veggie mixture and pan fry until brown but not soft.
- Add balsamic vinegar and keep tossing until tender but not mushy. Add salt
- garlic powder
- and pepper until the desired flavor.
