Quick Sauteed Summer Squash Recipe @pinch

A wonderfully quick and easy summer side dish. The summer squash is tender. We loved the sweet carrots and slightly caramelized onions. Balsamic vinegar adds a slight tang to the dish. A delicious way to enjoy summer squash. If you want a quick and flavorful yellow squash side dish, this is it! Takes a few minutes and is not your momma's mushy stewed squash! Everyone who complains about summer squash LOVES this!

Ingredients :
  • 3 large summer squash
  • 2 large carrots
  • 1 large sweet onion
  • 3-4 tablespoon(s) balsamic vinegar
  • 2 tablespoon(s) olive oil
  • 1-2 teaspoon(s) Lawry's seasoning salt
  • 1 teaspoon(s) cracked black pepper
  • 1 dash(es) garlic powder
Intructions :
  • Slice yellow squash and onion in 1/2
  • slice
  • and halve.
  • Use a mandolin and slice the carrots into thin slices.
  • Mix all veggies together and add spices.
  • Heat olive oil in a skillet (I use a copper wok on a gas range).
  • When very hot
  • add veggie mixture and pan fry until brown but not soft.
  • Add balsamic vinegar and keep tossing until tender but not mushy. Add salt
  • garlic powder
  • and pepper until the desired flavor.
