Cooking for two can be challenging, but this recipe lets you get a small dinner on the table in a snap. This ranch chicken and potatoes casserole has a classic combination of bacon, ranch, and cheese. Once cooked, the chunks of potatoes are tender. Chicken breasts make this casserole a complete meal. There's ranch and bacon in every bite. A hearty weeknight dinner for two people. If you have a family, the recipe can easily be doubled. One of my favorites!
