Ingredients :
  • 2 - unbaked pie shells
  • 2 large eggs
  • 1 cup(s) ricotta cheese
  • 1 can(s) pumpkin (15 oz)
  • 3/4 -1 cup(s) brown sugar, firmly packed (it depends on how sweet you like it)
  • 1/2 teaspoon(s) salt
  • 1 1/2 teaspoon(s) pumpkin pie spices
  • 1 teaspoon(s) vanilla extract
  • 1 cup(s) evaporated milk (8 oz)
Intructions :
  • Beat eggs lightly. Then stir in ricotta cheese until smooth
  • Stir in pumpkin, brown sugar, salt, pumpkin spice, and vanilla extract
  • Stir in evaporated milk and mix well
  • Pour into unbaked pie crusts
  • Bake at 375 for 45 to 60 minutes. Cool on a wire rack.
