Salmon Fillet With Herb Pesto Recipe @pinch

The instructions and cooking time for this salmon are perfect. The final result is tender and juicy. We loved the flavor grilling adds to the salmon, but this could easily be baked in the oven. On top is a pesto that's sweet and tangy. We opted to use pine nuts for the pesto but walnuts would be great too. You can use this pesto with any fish, chicken, or meat. This salmon is great done on the BBQ. But can also be baked in the oven at 375F and cooked until it flakes when tested with a fork.

Ingredients :
  • 1/2 cup(s) fresh basil leaves
  • 1/2 cup(s) fresh parsley
  • 1/2 cup(s) fresh chives
  • 1 tablespoon(s) lemon zest
  • 2 tablespoon(s) lemon juice
  • fresh
  • 1/4 cup(s) olive oil
  • plus more for brushing
  • 1/4 cup(s) water
  • 2 clove(s) garlic
  • chopped fine
  • 1/2 cup(s) pine nuts or walnuts
  • 4 - salmon fillets
  • 6 ounces each
  • skin on and deboned
Intructions :
  • In a blender add basil
  • parsley
  • chives
  • lemon zest
  • lemon juice
  • 1/4 cup oil
  • water
  • and garlic. Puree.
  • Add nuts and puree until smooth; set aside.
  • Brush salmon with oil. Season with salt and pepper.
  • Place salmon grill and cook for 3 minutes with the lid open.
  • Rotate fish by 90 degrees and cook for another 3 minutes.
  • Flip salmon and repeat to cook as before.
  • Serve salmon with a dollop of herb pesto. A baby spinach salad goes well with this fish or salad of your choice and crusty dinner rolls.
