Scalloped Potatoes Recipe @pinch

These creamy, cheesy au gratin potatoes cook to perfection. The sauce is thick, rich, and filled with cheese. Topping with a little more cheese takes this decadent side dish over the top. This recipe makes a smaller batch of potatoes, which is perfect if you're not serving a crowd. The recipe can easily be doubled for larger gatherings. I made this for the first time tonight, and my family devoured it!

Ingredients :
  • 4 cup(s) thinly sliced potatoes
  • 3 tablespoon(s) butter
  • 3 tablespoon(s) all-purpose flour
  • 1 1/2 cup(s) milk
  • 1 teaspoon(s) salt
  • 1 dash(es) cayenne pepper
  • 1 1/2 cup(s) grated cheddar cheese
  • divided
  • - paprika
Intructions :
  • Peel and slice 4 cups of potatoes.
  • In a small saucepan
  • melt butter and blend in flour. Let sit for a minute.
  • Add all of the cold milk
  • stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling
  • stirring occasionally with a whisk. Reduce heat and stir in 1 cup of shredded cheese.
  • Place half of the sliced potatoes in a lightly greased 3 quart casserole dish. Pour half of the cheese sauce over the potatoes.
  • Repeat the layers with the last of the potatoes.
  • Top with the remaining cheese sauce.
  • Sprinkle the remaining 1/2 cup of cheese on top. Top with some paprika for color.
  • Bake uncovered for about 50 - 55 minutes at 350 F.
