These creamy, cheesy au gratin potatoes cook to perfection. The sauce is thick, rich, and filled with cheese. Topping with a little more cheese takes this decadent side dish over the top. This recipe makes a smaller batch of potatoes, which is perfect if you're not serving a crowd. The recipe can easily be doubled for larger gatherings. I made this for the first time tonight, and my family devoured it!

Ingredients :
- 4 cup(s) thinly sliced potatoes
- 3 tablespoon(s) butter
- 3 tablespoon(s) all-purpose flour
- 1 1/2 cup(s) milk
- 1 teaspoon(s) salt
- 1 dash(es) cayenne pepper
- 1 1/2 cup(s) grated cheddar cheese
- divided
- - paprika
Intructions :
- Peel and slice 4 cups of potatoes.
- In a small saucepan
- melt butter and blend in flour. Let sit for a minute.
- Add all of the cold milk
- stirring with a whisk.
- Season with salt and cayenne.
- Cook sauce on low until smooth and boiling
- stirring occasionally with a whisk. Reduce heat and stir in 1 cup of shredded cheese.
- Place half of the sliced potatoes in a lightly greased 3 quart casserole dish. Pour half of the cheese sauce over the potatoes.
- Repeat the layers with the last of the potatoes.
- Top with the remaining cheese sauce.
- Sprinkle the remaining 1/2 cup of cheese on top. Top with some paprika for color.
- Bake uncovered for about 50 - 55 minutes at 350 F.
