A fun and tasty shortcut for a hearty and satisfying soup that warms you on a cold day. Rich and savory broth is infused with flavors from shrimp, green cabbage, snow peas, mushrooms, and green onions. We love the crunchy texture of the fresh bean sprouts. Packaged Ramen adds flavor and a touch of spice to this noodle soup. Very easy to prepare, customize the recipe with your favorite toppings and seasonings. On the healthier side, a bowl of this soup is a wonderful way to enjoy the flavors of Chinese cuisine in a simple and satisfying way. I got this recipe from my stepmother. It is absolutely yummy. I had actually forgotten it until I saw a similar recipe online called Asian noodle soup. This soup is souper simple. The only thing to avoid is overcooking it. I must admit times are approximate but close. I'm one of those cooks that everything is a pinch or a dash. On timing, It is when it looks/tastes right. This recipe is almost foolproof.

Ingredients :
  • 1 pound(s) small shrimp, fresh-cooked, peeled & deveined
  • 1/2 cup(s) sliced green cabbage
  • 1/2 cup(s) snow peas
  • 1/2 cup(s) sliced fresh mushrooms
  • 1/2 cup(s) green onions sliced
  • 1/2 cup(s) bean sprouts, fresh
  • 3 package(s) Ramen noodle soup, Oriental flavor (3 oz each)
  • 8 cup(s) water
Intructions :
  • Put eight cups of water in a large pot heating on medium heat just to a boil. Then turn to low
  • Take the three packages of ramen and remove the seasoning packets. Set the noodles aside and add the seasoning packets to the water
  • Take the mushrooms, cabbage, and green onions and slice them. Add to water simmering on low for approximately 10 minutes
  • Add the shrimp and ramen noodles to the pot. By now, your soup should be filling your kitchen with a wonderful aroma
  • The last step... I'll bet you thought I forgot. The secret ingredient is the bean sprouts. You add these last as you want them cooked but still crisp. Just wash and toss them in. I never thought I'd eat bean sprouts, but they give this soup an amazing flavor
  • The only seasoning I use is pepper to taste. I serve with soy sauce and people can add it if they like. There is plenty of salt in the ramen packets. You really don't need anything else.
