If you love eggnog, but not all its calories and fat, you'll love this skinny eggnog recipe. It is a guilt havefree way to enjoy the Christmas cocktail. Thick and creamy, this eggnog has just the right amount of spice. There is a tiny bit of rum flavoring which adds to the flavor. Drink this skinny eggnog and you can have more cookies. This is really good if you like eggnog but don't like the fat. This is a reduced havefat version of the thick, rich holiday drink.

Ingredients :
  • 1/4 cup(s) cold water
  • 1 tablespoon(s) unflavored gelatin
  • 1 cup(s) powdered fat-free milk
  • 1/3 cup(s) Splenda
  • 2 large eggs
  • 2 teaspoon(s) vanilla extract
  • 1/4 teaspoon(s) rum extract
  • 1 teaspoon(s) cinnamon, plus more for topping
  • 1/2 teaspoon(s) nutmeg
  • 3/4 cup(s) boiling water
  • 2 cup(s) ice water
  • - reduced fat whipped cream, if desired
Intructions :
  • In a blender, combine the cold water and gelatin. Let it sit for a couple of minutes. Add the powdered milk, Splenda, eggs, vanilla, rum extract, cinnamon, and nutmeg
  • Blend on low for 30 seconds. Add the boiling water
  • Blend for another 30 seconds on low until gelatin is dissolved
  • Add the ice water
  • Blend on high for 2 minutes
  • Divide into glasses. Top with reduced fat whipped cream and a sprinkle of cinnamon.
