Snowballs Recipe @pinch

At some point, everyone has this type of cookie during the holiday season on a cookie tray. One taste and these snowballs will bring you back to being a kid during Christmas. They are buttery and similar to a pecan sandie but with a little more crunch. The cookie itself is not overly sweet and rolling in powdered sugar adds the right amount of sweetness. A pretty addition to a holiday table. This cookie has been called by many names... Russian tea cakes, Mexican wedding cookies. My mother would just call them snowballs. There are also many ways to make them but here is the recipe that I use.

Ingredients :
  • 1/2 cup(s) sugar
  • 1 cup(s) butter, softened (2 sticks)
  • 2 1/4 cup(s) all-purpose flour
  • 1 teaspoon(s) vanilla
  • 1 pinch(es) salt
  • 1/2 - 3/4 cup(s) chopped walnuts or pecans
Intructions :
  • Cream together butter, sugar, and vanilla
  • Add flour and salt; mix well. The mixture will be dry and crumbly
  • Fold in nut of choice
  • Scoop out about a tablespoon at a time
  • Squeeze the mixture together and roll into a ball
  • Place balls on a parchment paper-lined cookie sheet
  • Bake at 375 degrees for 10-15 minutes
  • When done, cool and roll each ball in confectioners' sugar. Some recipes say to roll in sugar while warm but I find the sugar can get wet and soggy. You be the judge!
