This is a fantastic grits casserole that's taken to another level. Onions add great flavor, while the cheese makes it nice and creamy. An easy casserole for a weekend breakfast or brunch. It is filled with ingredients people love. Add fresh fruit for a great meal. I have lived alone for many years so I learned to cut down recipes for small quantities. You can also use these recipes for larger groups by doubling ingredients.

Ingredients :
- 4 medium sausage patties or your favorite healthy substitute
- 2 large eggs
- 2 cup(s) cooked grits
- 1/2 small onion, chopped
- 1/2 small tomato, chopped
- 2 cup(s) Mexican blend shredded cheese
- 2 dash(es) salt (to taste)
- 2 dash(es) pepper (to taste)
- 2 dash(es) garlic powder
- 1 tablespoon(s) butter or substitute
Intructions :
- Preheat oven to 350 degrees
- In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste
- Cook sausage patties in pan on medium-high heat. After cooking sausage patties, chop them up in bite-size pieces
- Add chopped onion, saute until soft
- In a bowl, break eggs and stir well with fork
- In a 9x13 baking dish, layer sausage, onions, chopped tomato, and shredded cheese. (in that order)
- Stir in grits and add eggs
- Stir
- Put in oven at 350 for 30 minutes. Take out and let set for 5 minutes.
